Tortang Talong

The Filipino Association of Monash (FAM) is a student run club with the aim of introducing and promoting an interest in Filipino culture through our events throughout the semester to Monash students, Filipino and non-Filipino alike.

INGREDIENTS

2 long eggplants
200 grams of ground meat (chicken, pork, or beef)
1/4 cup diced onions
1/4 cup diced red bell peppers
4 minced garlic cloves
4 eggs
Salt
Pepper
Oil for pan

METHOD

Step 1
Roast or grill whole eggplants, until the skin is mostly charred and the flesh has softened. Allow to slightly cool, and then peel off the charred skin. Set aside.

Step 2
In a pan, pour a drizzle of oil, add onion, garlic, and red bell pepper. Stir and cook for a few minutes, until softened. Then add the ground meat and stir frequently for a couple of minutes until fully cooked. Set aside.

Step 3
Crack two eggs in a shallow dish with a pinch of salt and a pinch of pepper. Whisk thoroughly and place one peeled eggplant on top of the whisked eggs. Use a fork to gently smash and flatten the eggplant. Pour half of the meat mixture on top and spoon some egg over the top.

Step 4
Heat oil in the same pan, and place the eggplant on it, along with all the egg and meat mixture. Once browned on the bottom quickly flip the omelette over to cook the other side. Place the eggplant on a plate

Step 5
Repeat steps 3 and 4 with the other eggplant.
